This is a fairly representative example of Cuban Picadillo. I like to serve this with a green salad, Cuban bread, and fresh fruit.

Sam�s Picadillo

Mix together, 1 � pound each, ground beef and pork
Season, with salt, pepper and a little soy sauce
Brown the meat in a skillet, with a little olive oil. Drain and set aside.

Course chop:
One bell pepper
One onion
Some garlic
Mix together

Add in:
Small jar of Spanish roasted red bell peppers, chopped
Two jalapeno or Serrano peppers, fine diced
4 plum tomatoes, chopped

In a Dutch oven:
Pour in two Tablespoons olive oil, and heat on med. high
Add in the vegetables, mix well.
When simmering, add in
Two firm bananas or green plantains, chopped
� cup raisins
� cup chopped, blanched almonds
salt, pepper to taste
Cinnamon, All Spice, red pepper flakes, to taste
� cup Brown Sugar
1 Teaspoon ground Cumin

Add back the browned meat, mix well

Add 1/2 cup or more, of stock
Add in � cup chopped green olives
Mix well, and place in oven at 350�
Cook uncovered for about 30 min, and check to see if more liquid is needed. Adjust if necessary.

Cover, lower the heat to 250, and cook another hour. When finished, the top should have a slight crust on it, and the interior should be quite moist.
