The only way the family will eat it is to slice thin, marinate and make jerky with it.

Bone the breast meat. Cut down either side of the keel bone, keep your knife to the bone. You'll have 2 boneless breasts.
The best way I've found is similar to cooking any wild game...grill or pan sear RARE or MEDIUM RARE. You will not believe the taste.
Like a rib eye.
Don't be afraid to eat it rare. From this point, set it aside and make any Sauce that would compliment duck or beef.

This is not my own, but one I've used.
Cut the goose breast into strips and marinate overnight in Italian dressing. Wrap in bacon, secure with toothpick, and grill to medium rare (or to your preference).
Some folks also like to place a pickled jalapeno pepper slice in the wrap.

As to the title, I believe that the target area is around the other side and quite a bit lower.
Not a real member - just an ordinary guy who appreciates being able to hang around and say something once in awhile.

Any good recipes for Canadian goose? Not canadian but snows and specs; breast out, boneless, marinate overnight (or longer) in orange juice, bring to room temp and pat dry, coat with seasoned flour (salt, blk pepper, onion and garlic pwdr) and sear in a teflon skillet using extra virgin olive oil to med. rare. It was/is excellent fare. Have done it several times this year.

Started doing this a few years ago after the guys in the next camp brought some over. Would not have believed how good it was until I tried it. Now, other than sausage, it's about the only way we use it.
