I bought a spiral cut ham for just my Wife and I.

"we" have LOTS of left over ham, and I'm thinking of making some soup with it.

I'm on a low carb. diet, and can't have any beans, rice or 'taters.

So my options are limited.

Am thinking maybe some kind of chili, with no beans,(correct kind) green pepper, onion, etc.

Anyone have any good ideas?

vbs, ham, and chili in the same sentence somehow sounds a bit strange to me.
I hope someone comes along with real help, all I can think of just now might be diet Ex lax pudding.

How about Split Pea Soup. No Beans, you can either use green peas or yellow split peas which ever one has the lowest carb count. Good Luck

you can make a decent soup with stock, the ham, kale, spinach or some other greens, celery, and vegetables like corn, carrots, turnips or squash.
Frankly, it would be a LOT better with some rice in it.

Lentil soup. Dried lentils soaked overnight, the ham, carrots, onions, maybe a little celery if you like, chicken stock, cumin, garlic. That's all I can remember off the top of my head.

try shedded potatoes in your soup. we use left over spiral ham in soup all the time. shredded taters ,corn and ham is very good. onions are always a must.sometimes we add a can of white beans.

Lentils are high in total carbs. They are slow to break down generally, but not good for a low-carb diet.

Cabbage and cauliflower are king. Onions are fairly high in carbs, too, and the carbs are sugary rather than complex.

Ham, cabbage, and cauliflower make very good soup.

Blended cauliflower with butter makes a very good mashed potato substitute.

It is traditional where I am from to have soup twice a day, lunch and supper. In the winter the most popular soup is hunters stew (bigos). It is basically what ever meat you have, spices similar to pickling spice, tomato, mushrooms, sauerkraut and cabbage.
Tradition says it is on the back burner at all times, and every day you add stuff to get the pot full. So there is no real recipe, just add left over meat and keep the main items like cabbage added. My family strives for multiple meat types like beef, pork,venison, and associated sausages - not really chicken or turkey.

Here is a cabbage soup recipe I just stole off Allrecipes.com. Sounds pretty good and would be great with your ham tossed into the mix. I may give this a try myself.

Place carrots, onions, tomatoes, cabbage, green beans, peppers, and celery in a large pot. Add onion soup mix, tomato juice, beef broth, and enough water to cover vegetables. Simmer until vegetables are tender. May be stored in the refrigerator for several days.


My biggest fear is when I die my wife will sell my guns for what I told her they cost....

Who said the ham was laden with fat? Could be a very lean ham, or the fat might be trimmed completely away.

If you were a diabetic, you would understand his low carb need.

If you don't want a broth based soup,or you prefer something different with texture, you could make a cream style soup with them also. Use lots of cauliflower. When the cabbage and cauliflower are cooked, remove the heads of cauliflower, blend them with some whole cream, or some half & half. and them ad back to the soup kettle.

No need to add any salt. Flavor with garlic, black pepper etc...

Thanks for all the tips!
Will keep these in mind for next time.

The soup I ended up making had;

2 cans low sodium chicken broth

1 can diced tomatoes

6 tomatillos

1 bell pepper

2 lbs diced ham

1 diced onion

1 Ts. chili powder

2 Tbsp. Tapatio

2 Tbsp. green Tobasco

It actually turned out pretty darn good!

I've lost 13 lbs in the last month, on my low carb. diet!

Forgot to mention;

YES, all the fat was trimmed away from the ham.

On this low carb. diet, I can have all the meat I want, just very few carbs. that come from things such as rice, beans, carrots, potatoes, bread, wheat etc.

Bigos is a favorite of mine.
