We all know what biscuits and gravy are.
Instead of sausage gravy, have you ever had egg gravy ?
I come from a heritage of pioneers. When coming from the East to the West they did not have any pork with them. They did however bring chickens. They would scramble the eggs, and just like you do with sausage gravy, they would make it into egg gravy.
It's been in our family since they left New England in the 1850's and moved west.
My mother told me that when she was a young girl during WWII that this was very popular in her home. My grandfather was gone to war, and she and my grandmother lived with my great grandparents. I recall that my great grandfather always had 60-70 chickens around. So eggs were a good resource for protein.
Any of you ever had egg gravy ? If not, you might want to try it. Scramble your eggs in a large skillet. When done, move the eggs to one side. Add your favorite choice of fat (butter, bacon grease etc.). When the fat is hot, add flour. When flour is done cooking, add milk, salt, pepper. Thicken and serve. I like it over toast.

So, NV - Did you try it ? By the way, I lived in Norther NV for 5 years- Back in the 80's - Loved it

Sawmill gravy and eggs.
Are you cooking the eggs first? The way I've seen folks do it is to cook the eggs in the bubbling sawmill gravy.

Folks from Old Dixie like the tomato gravy. Just add canned or stewed tomatoes too gravy and onion flavoring. When there were meat shortages folks had to scrounge.

Yes, I understood that you scramble the eggs first, but SCRAMBLING eggs is NOT cooking eggs, it's scrambling them.
So the question still stands.

I like a 2 or 3 eggs runny side up with my biscuits and gravy. Haven't tried mixing the eggs with the gravy, I'm sure it would be good.

growing up we had them boiled first than cut put in pan gravy bacon grease flower milk salt pepper on toast.

but but it's called plain ol' sausage gravy We never put anything in our gravy, just put it on top of things. Sausage and eggs are a side dish, or an under dish in most cases. I like to order white gravy with french fries in a restaurant. Way better than ketchup. miles
