According to the Alaska forum, they are black cod collars ! Indeed they are! I decided to start another thread down here to track my progress with these. I have never smoked them before so hopefully the learning curve is short.

so what is a black cod collar? These ones are two strips of meat that run from the chin area to the pectoral fins. We slice from the chin to the fins and pull the strips out, they are connected together at a small bone. Best part of the black cod IMO, super oily.
