When I was growing up a favorite dish was catfish stew. It used whole skinned catfish not filets but it was awfully good. I've not had it for about 45-50 years but just the thought of it makes my mouth water. It was served with rice or grits. Below are 2 recipes. We never used potatoes in ours.

I have also used catfish to make a soup with celery, onions, a bit of butter and chicken stock. Corn and english peas can also be added if you wish. A little ham or bacon is also nice in the soup.
