I throw the meat, any kind of game, into a cooking bag. The clear kind. Along with a can of Italian style tomatoes, and a sliced up yellow onion. If it is a wld duck, or big game, I soak the meat in a strong salt water solution for a couple of hours first.
Marintating the meat in the above for most of a day works too. I just finished eating a grey squirrel that I did that way. The tenderest squirrel I ever ate. I put the tomatoe/onion mix over a baked potato. I've used rice in the past. Fast, fool proof, and simple. Cleanup is a snap. E

Great idea. Have loved squirrel since I was a kid. Will try it on the grizzzled fox squirrels that never seem to tender up.
