I was just thinking about him the other day actually. still miss him and our PM's on here.


I did the tenderloin in the smoker last night. 225 for 2 hours was perfect. was going to take a pic but they didn't last long after they came out.

turned 55 today.
going to make an effort to fish more often this year.
at least,when its not so frigging cold out.
also make an effort to see old friends more.
lost two this last week.

I went yesterday with a few of the kids. Have I ever said I hate ice fishing? Well, I don't. But I could have made a case for it yesterday. We caught fish but it was friggin cold.

EXCELLENT !

I'll move my Ice Shack (Read; Hard sided & wood heated) out this weekend.

Will still fish from the portables, to nullify wind, but be nice to have the larger space to warm up, eat & BS in !

this is how I've done mine, it's amazingly tender and you get the full flavor of the meat. I think I cooked them at 225-250 for 2 hours? hard to tell because my old smoker was a POS and I didn't trust the temp gauge thingy. I just got a feel for it and knew about how long to cook it. but I think my above statement is really close when I did these.

I did an antelope roast last night and no the smoke doesn't reach the meat. I was thinking about double smoking it starting with the meat, and then wrapping with bacon and smoking it again then just wait for it to come up to temp. no need to wrap in foil that way. I brought mine up to an internal temp of 144 and it was perfect, almost a pale white on the inside. this morning it was fairly pink what was left. I threw it in the crockpot on low so this evening it will pull apart nicely and we'll do fajitas. yum yum!

We had venison roast two nights ago and it was great. In the past I've not typically been a fan of the roasts. But this one made me a believer. It was fantastic.

long and slow is the key for my taste. we like to put a can of cream of mushroom and a can of tomato soup in there sometimes and make orange gravy. keeps it moist and is yummy over taters with a small veggie side. asparagus or broccoli are my favorites.
