I make this often, when I have left over rice. The amount of each ingredient is not really important. The mixture, when poured into the saute pan should be fairly liquid though.

Half cup cooked rice
one egg
several ounces of hot pork sausage
onion slices
butter
grated cheddar cheese.

In a saute pan, melt the butter
add the onions, and cook for a few min.
add the pork sausage, break into small pieces, and cook.
Beat the egg in a small mixing bowl, and add the rice to it
spread the sausage and onions evenly in the pan, and pour in the egg and rice.
Cook on one side until it sets, then either flip, or slide the tortilla out onto a small plate, invert, and cook on the other side.
Grate the cheddar cheese on the top as the bottom cooks, and when the cheese is melted, its ready to eat.

I splash my Mango Madness hotsauce on it, and chown down. This goes great with biscuits or cornbread, and a good cup of coffee.
