Who's got a fried chicken recipe with results so good everybody overeats 'til its all gone?? What seasoning do you use on it before frying?

Who uses a recipe for fried chicken? All you need are;
Chicken; cut into peices. Skin on or off your preference.
Flour, salt, pepper, poultry seasoning, or anyother seasonings you like.
Hot Crisco.

I've got good recipes for game birds................ What state do you hunt chicken? Do you need a guide? How much are tags?...........LOL.........

egg and bread crumbs! That's your problem yankee. leave that stuff alone. Git your crisco good an hot before you put your chicken in and you wont need egg to hold the flour and seasonings onto the chicken.
Now this is how a good southern person fries up a mess of yard bird.
Cut that bird up and rinse with cold water.
put your flour in a bowl, A&P sack, or large ziploc bag. Throw in a little salt, peper, and poultry seasonings and mix it up.
roll the chicken peices in the flour mix and place gently into HOT crisco. brown on both sides, reduce the heat and cook until done.
If you like crispy chicken leave the lid off of the skillet while cooking. If you like presure cooker style chicken leave the lid on.
Popeyes and Kentucky fried can't make chicken like a southern person. It can't be done in a pressure cooker at fast food places.

sse Prairie dog has told you all that there is to it. Only one thing that he left out and that is don't crowd your chicken in the pan. Leave enough room between pieces so the grease can come up around it. Chicken takes a while to cook right. If you try to rush it it will be tough.

OK, tryin' it tonight. Sounds easy. Thanks again you guys EXCEPT HANDGUN357. You can't just buy a tag to shoot a chicken. There's a lottery. You do need a guide. Plus there's caping and mounting fees and it really adds up.

Why? I use the same stuff PDS does, except I use the corn starch and corn flake crumbs instead of flour. Make mine EXTRA CRISPY!

SSE, this is chicken we are talking here not fish, and the southern boys win it hands down. My maternal Grandmother was from Virginia she was a very good cook. Grandmas chicken was as PDS said. There just isn't a better way. Believe me I have tried, But nothing beats a cast iron fry pan with Crisco and floured chicken, salt and pepper. Damb no wonder I'm fat with a heart condition <img src="/ubbthreads/images/graemlins/wink.gif" alt="" /> Now there is another way but it wont be as good as Grandmas.
Debone da bird, hack im up inta small hunks, pat dry after rincing, always rince chicken, salmonilla will get ya if you don't. Soak in butter milk then roll in Panko breading, seasoning salt and pepper, fry in yellow Crisco( butter flavored) makes passable chicken. Hey Sitka there is some thing I did't boil, now wait a second I do boil chicken when making chicken and dumplings yup I can boil darn near any thing. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

I'm gonna keep making it different ways. But I will say, when I made it like a Yankee, I found the DARK meat to be juicy and tender and came off the bone good and hardly had to chew it.

Tlee, fried chicken is salted, peppered, rolled in flour and fried in crisco. you should also never use anything but a deep cast iron skillet to fry it in. anything else is not fried chicken. some cajun spices in the flour is also acceptable. tom

Dog - I was simply referring to cheeko wings. Generally boil 'em before bakin or grillin with sauce and the like.
Well, headed to the Keys tonight to drive back a vee hickle. Kindly leave some chicken fried steak in a box by the road.
