Good policies and procedures are essential. Make employee expectations clear and visible. Job descriptions and checklists. Most restaurants can't afford to pay 6 figure salaries and $10/hour people don't always meet high expectations without good training and clear expectations. Track data to help predict patterns and reduce waste. Watch your ratios like a hawk, if food costs get over 40% something is wrong. Usually food walking out the front or the back due to dishonest employees. Make sure they know you prosecute theft and do it if it happens.
Good food, good service, and good value all done consistently each time. I quit eating at a chinese joint I've loved for years because the portions got so small I was paying $13 for 3 ounces of chicken thigh, a couple of spears of broccoli and a cup of rice. I've calculated restaurant food costs before and I knew they had about 90 cents into a $13 meal. Great taste but even my wife who's pretty small said i could eat three of those and noted we leave still hungry and when we go to another place we leave with left overs. We wrote the poor value place off completely and will never go back.
