I’ve tried, picked up at Costco Monday, think it would work well on chicken and pork too. Trying it out on some kodiak sockeye now

I've tried several rubs on salmon, but always come back to simple - salt, pepper, garlic.
Can't be beat, IMO. Then again, I like the taste of salmon and don't want to mask it.

Fresh caught salmon, fresh dill, fresh lemon, salt, pepper and slight smoke of grapevine. Seen that rub at Costco though. Think I could make it myself if I ever oven cook salmon steaks,

My wife makes a side sauce we like with salmon. She just dices up cucumber and fresh dill, mixes it with sour cream, then salt and pepper to taste. My kids would eat it by the spoonful.

And an IPA to wash it down with I bet! I do like rolling it in panko then frying as well. My buddy tossed a whole headed and gutted sockeye in a huge wok filled with peanut oil for me once. My kids really liked that one, with a little S&P on it after it was done. They ate the skin like potato chips!

Mustard is a very different way to go, but on salmon it can be a tasty side sauce. Mix together one part yellow table mustard, one part whole grain mustard, and one part dijon mustard. Add more dijon if you want it a touch sweeter. It is surprisingly good with salmon.

1 Tbl White Miso 2 Tbl of soy sauce 2 Tbl of Mirin 1/4 cup white wine
Mix well with a whip. Put large flat bowl along with skin less fish. Marinade for 30 minutes in refrigerator (turning once if fish pieces are not covered.
Place fish on an oiled broiler pan and spoon a bit of the marinade on the fish. Broil for 4-5 minutes. Flip and repeat. Glaze should turn brown well on each side
Works great on salmon or halibut.

Miso is fermented so it doesn't go bad if kept in the fridge. Mirin is a type of rice wine. Doesn't got bad either.

Sometimes simple seasoning is better.I like to cook it with a little sea salt and a lite sprinkle of garlic powder.A little dash of extra virgin olive oil and cook it low and slow in a skillet until done.

Nice haul of fish! I need to go find some of this seasoning, I loathe going into anchorage. I’m going to see if our local 3 bears store has it. I have freezer full of reds and I need something to Put on them i done everything else. What is your salmon tacos recipe? How about your best smoked salmon dip recipe?

That is not smoked salmon... she grills it with smoke... for someone claiming to be a smoking guru she does not even understand the difference between cold-smoking, hot-smoking, and lox. And completely overlooks the whole brine and pellicle routine. As ordinary as the recipe could possibly get and does nothing to show the real value of smoked salmon in the dish... it is about the texture...

That is what my dogs have always thought! I put much more into it than that. There is also the realization that comes from seeing how much better something can be, done right.

We use Paul Prudhomme's Salmon Magic. He knew his stuff. Magnificent on a cedar plank! We do it on a cedar plank using Everglades all purpose seasoning. Everglades Seasoning
