make some Vietnam Nuoc mam sauce ,out of some of your catfish ,then dip the rest of your fish in it , it will cover the muddy taste up

Mush them up into patties like salmon. Lay them in over-scorched cheap ass corn oil. Let the smell waft all through the neighborhood.

Catfish will be mushy after picking. The best fish for pickling are Northern Pike. The bones dissolve in the pickling process. Vinegar/Onion/Garlic/Salt/Pepper & Picking spices for the liquid.
