I have been wanting a trailer rig for awhile and I finally made the decision to do it. I picked it up Thursday and seasoned it that evening. I had fishing trips Friday and Saturday so this morning I fired it up for the 1st smoke on it. I put a pork butt and a brisket on at 6 am this morning then added 3 racks of ribs at 11 am. Just before it was time to take the ribs off I added some smoked sausage and hot links. The smoker performed good holding between 230 - 260 degree for the whole time with me adding a split about every 45 minutes.

The wife and I kept one rack of ribs for supper and I gave my parents and a friend the other two set of ribs. I did the brisket for another friend and will take the pork butt and hot links to work tomorrow to feed the crew.
A few pictures.

Congratulations. RNF !

Did my first brisket on the new drum that didn't turn out as well as I wanted but I've been making some killer ribs and butts.

I'll try another this week

Nice rig. Wish I was as enthused about cooking as you are so I could get something like that.

How would a person gather up enough wood to run that thing?

Can you order it and have it shipped in?

Sweet set-up and a job well done. You did us fellow campfire smokers proud!

Now try it on some the fish you caught: go lower the temp by about 30 degrees and lightly rub it with paprika & herbs.

Jim Conrad: visit some bbq team or pit mfg websites in Texas and they usually have sources nearby that can ship you a pallet load of good mesquite / hickory wood. If serious smoker you can burn about two pallets (about a cord) a season. But for a recreational smoker a pallet should last you the summer if you mix in a bag of charcoal every two hours or so.

I have a lot of hickory trees here on my place. Come and get all the wood you want.

Jim, I cut my own wood and split it with a sledge hammer and wedge along with an axe. I have kinfolks with land that is timbered and they will let me cut there. But lately my neighbors has been trimming the lower limbs on his pecan trees and giving them to me. The limbs ae usually around 12 to 16 inches in diameter. Another neighbor took down 3 large pecans last week and piled them in the corner of his pasture to burn this winter. He told me to take all I wanted. These trees are around 30 inch diameter.

I ran my smoker from starting the fire at 5 AM to 4 PM that evening and burned around 25 -30 splits that were fifth bottle size and 16 inches long.

To all thanks for the kind words.
