Got a quart brewing now, got everything done before noon when the nectar content peaks. Hank Shaw has a good recipe for this. I think I will go for a full gallon while the flowers are at a peak. I make syrup, cordials, herbal remedies and cocktail out of this. I will be exploring new uses esp. if I make a gallon. An Elderflower bitters could be good.
