Mayonnaise....you done it yourself or store bought glop.
I recently tried my hand at making my own Mayonnaise...not so called salad dressing from a bottle.
Simple enough 2 egg yokes from large eggs 1/4 cup vinegar 1 tbls fresh lemon juice 1/8 tsp pepper 1 tsp salt 1 pint oil I used plain olive not extra virgin
by hand or with a mixer beat egg yokes and add a few drops of vinegar a little at a time. Add oil very slowly until 1/4 cup of oil is used. Then add the oil a little faster slowing down the mixer As mixture thickens add the rest of the vinegar and lemon juice a little at a time add the salt at the end. This is a slow process takes around ten to fifteen minutes. Have your oil and eggs at room temp for best results.
Home made Thousand Island dressing
1 cup of your home made mayonnaise 4 tblsp chili sause 1 table spoon minced sweet pepper or more 2 tblsp red pepper, or pimiento or both 1 tblsp chopped chives or finley minced onion garlic if you like and any thing else you think you need. Some folks like chopped dill pickle, I like a little pickled jalapeno. mix well and enjoy on a green salad.
