These are pretty easy to make, and they go well with chicken or lamb. They are very savory.

Pita Quesadillas

Two Pita rounds, slit open, but left whole

8 ounce package of softened Cream Cheese
8 ounces Feta Cheese
Two Tablespoons Sun Dried Tomato, fine diced
Two tablespoons chopped Curley Parsley
Two Tablespoons shallots, minced
One Tablespoon Good fragrant Olive Oil
Three Cloves Garlic, minced
Kosher Salt, fresh Black Pepper

Preheat oven to 450F

Mix the two cheeses together,
Mix in the other ingredients, and stir to combine
Spread the cheese mixture on one side of the split Pita rounds, and top with the other side

Bake at 450F for about 10 minuets, until the Pita bread is crisp at the edges
Remove, drizzle with more Olive Oil, and cut into wedges.

Serve with preserved Lemons and olives
