Chocolate and cinnamon are significant ingredients in “Cincinnati style” chili. Which most folks south of Mason-Dixon would NOT consider to be chili. "Cincinnati Style" ? Get a rope! That whole concept is just wrong - on so many levels!

In all honesty, I usually go 2:1 red chili to green chili. I love the flavor of good green chili powder.
A little cocoa powder sounds good. But then, I'm a sucker for a good mole. Throw some raisins and peanuts in that schit too! 😀

No chocolate or cinnamon! That's awful. Cincinnati "chile" is a disgusting abomination. Same goes for other bizarre ingredients like celery.
Give me a couple pounds of ground mule deer. Green chiles, onions, cumin, salt, paprika, adobo seasoning to taste. Brown meat first. Crock pot slow cook from Sunday morning before church to early afternoon when football game starts. One heaping teaspoon of masa flour mixed in at the end to make the gravy and a big spoon of clover honey. Serve with fresh corn bread. Beans are optional depending on your taste. Sour cream and raw onion if you like as a garnish.

You don't want to use a lot, but for pure flavor, add ripe fresh habaneros. Leave the seeds out and it will just spice it a bit, but make it savory. If there's a better pepper, flavor wise, tell me and I'll buy them.

Nutmeg will give it a similar dimension as cinnamon, but better. Another vote for tequila, and whatever fresh peppers are available in the store. Strongly prefer them roasted, first. The redhead seems to think chili has beans in it. So sometimes I make bean stew with chili flavoring....
The secret: good stewing meat, no ground beef, deer, elk, moose, bison, or whatever.
