Every good cook should know how to put one of these on the table.
The best recipe I ever saw, was off the ARGO cornstarch box
1 cup sugar
1/4 cup Argo cornstarch
1 1/2 cup cold water
3 eggs, seperated, the yolks, beaten
Zest of one lemon
1/4 cup lemon juice
1 Tablespoon butter
1 baked 9 inch pastry pie crust, prebaked
3 egg whites, for the meringue, + 1/3 cup sugar
Preheat the oven to 350F
In a medium saucepan, combine the sugar and cornstarch. Stir in the water until smooth, then add in the egg yolks
Stirring constantly, bring this to a boil over medium heat, and boil for one min. Remove the pan from the heat and stir in the lemon zest, juice and butter. Whisk to combine, and pour into the baked pie crust.
beat the egg whites in a clean bowl on high speed, until foamy. Gradually add in the sugar, beating until you get stiff peaks. Spread the meringue over the filling, sealing the edges to the crust.
Bake for 15 min, until the meringue peaks are golden brown. Cool on a rack, then serve.
