Lol...I wish I never needed a "good" fillet knife. DR Chicken knives are all most people ever need.

A few years back, my wife asked what I wanted for my birthday. I told her a nice filet knife. She got me a Wustoff. Sharpest knife I’ve ever seen, and I’ve seen a few. Got a Rapala folder I’ve had for years, but doesn’t take an edge well or hold one long.

I have a 10" Buck that I do most of my filleting and skinning with, and couple Dexter-Russells that I use for heavy cutting and cross-cutting fillets for drying and smoking.

Rapala is made in China as well. Go DR for the same money. Cutco is USA made and is very good, but probably more money than you want to pay.

Some rapala are.

Those rapalas in the bucket by the cash register are made in china.

The J Martini ( sp?) are made in Finland.

You asked about filet... Katon has some great prices on pro grade/resturant stuff. https://www.katom.com

I rarely need a filet anymore... I smoke most of my smaller fish... or deal with large fish/game mostly.

Victorinox wavy is my carry knife for hunting (insanely sharp).

Also easy to sharpen a single hone wavy on the back flat.

Dexter is much cheaper, but still a fair knife for a 1/2 dozen tuna or such.
