Simple, yet tasty. No pie pan to worry with, just the crust and filling.

Preheat oven to 350F

Pastry for one 9 inch pie.
4 pears, peeled, cored and sliced
1 Tablespoon sugar
1 Tablespoon brown sugar
1 Teaspoon Allspice
1 Teaspoon Ginger
2 Tablespoons Butter, in small pieces

Toss the Pear slices with the sugars and spices
stir in the Butter

Roll out the pastry, place the filling in the middle. Fold up the edges. Brush the dough with milk.

Bake at 350 for an hour. Let cool, cut and serve.

The wife and I ate half, before I remembered to take a picture laugh

Once, way back in my college days, I met a pair of tarts in a local gin mill. Both were delicious!

Seriously, this recipe looks good. Should work with other fruit (apples, peaches, apricots, etc.), too, right?

right Barney, but you need to be mindful of the liquid content of the fruit. Pears, and Apples give up less water, and the crust holds together. Peaches and plums etc, 'weep' more, and the crust then needs to be thicker, and you need to up the temp to closer to 400F.
