Bachelor week is going strong. Had a raging fire. Over cooked this strip steak 45 sec or so, but it was still great.

I have gone to buying Prime grade NY Strips.

Great marbling and a usually a completely edible steak, unlike Rib Eyes which have huge sections of fat

This is how you do leftovers.

After 3 meals of pork belly I wanted something different. So I diced it up fine and put it on the stove to render and crisp up more. After removing to drain on a paper towel and draining the pan, in went some coarsely chopped mushrooms and garlic.

Didn’t have any cream cheese so added a cup of milk and two dollops of sour cream along with the rendered pork (with a few pieces kept in reserve for garnish). A couple handfuls of shredded cheese and some parmesan, and served over some rice noodles that Slavyanka refused to use (she’s working tonight).

I give you Roast Pork Belly Carbonara!!

Happy holidays to you as well.

Tri tip, linguica, hot links, chicken, and if you squint you’ll see some pork belly.

Costco pork belly is great on the bbq. My go to recipe is Carne Asada seasoning, lime juice and some fresh garlic on them.

I don't do pictures but last night our Christmas eve dinner was shrimp baked in butter, olive oil,and Old Bay seasoning with baked potato and green beans.
We are going to my son's for grilled steak, baked potato and fixings.
Friday night my second grandson got married. Dinner was chopped brisket, sliced brisket, ribs with potato salad, baked beans,
and wedding cake.
I won't need to eat again for the next week!
