It is unusually hot here on the Olympic Pennsula. i have no desire to fire up a grill or cook in the house. Air conditioning is a rarity in this part of the world so indoor cooking is not done to much. What do you folks do when it gets real hot where you are at?

It's deli time; for prepared seafood salads,Greek salad, cold cuts, jelly salads and aspics, barbecued chickens, fresh baked crusty rolls etc. Anything but over the stove work.

winkl - When its hot, then it is time to grill. Use less fuel and such, anything is better than cooking indoors on a hot day. I did have my best results with one of those electric "water smokers" on hot days, since it doesn't get too hot to begin with and the thing worked much better. Shoulda got the charcoal one.

Another thing, homemade subs or other elaborate sandwiches are a nice switch, along with cold salads, side dishes.

Thanks guys, we been doing the cold cut thing and sandwiches, what i was hoping for was something different, not that i don't appreciate your responces, I do. i don't grow a garden or use shellfish this time of the year, What i would like is something different.

winkl - Since my family took off, I've been making salads. Here's a fave.

Lettuce covered with all or most of the following: chick peas, tomato, red onion, hard boiled egg, sliced avocado, grated cheddar, sliced beets, cucumber, gr pepper, bacon bits, fresh black pepper, grated fresh parmesan, you name it.

Then squeeze a bunch of lime juice over the salad, then add good italian style dressing, home made if possible or the four seasons stuff you mix yourself.

To kick it up, grill chicken breast and slice it over the salad before the lime juice and dressing.

chicken breast 1 - marinate in soy sauce, crushed garlic
chicken breast 2 - let it sit in a good seasoning before grilling, such as cajun or similar

Here are a couple using canned seafood. ( I know I know,
you don't have to say it <img src="/ubbthreads/images/graemlins/wink.gif" alt="" />

Tuna
Drain your tuna and add a chopped up red onion, a chunked up
sour pickle and some cider vinegar to moisten. Chill and eat
with crackers and a fresh tomato.

Salmon
Drain and add chopped onion, sweet pickle, hard boiled egg,
and a fine chopped seeded jalipino. Use a good tomato salsa
to moisten it. Goes good with cold cantaloupe.

Bog....OH ....Bog Man !!!! Canned Salmon.....thats an abomination....I will use fresh salmon just caught yesterday by my neighbor....he catches but does not eat fish...gotta love a neighbor like that. I lit the Webber kettle tonight tossed in some alder chips and cooked that finny critter to perfection...very medium rare, next to almost raw.....mmmmmmmm good eats. It is never too hot to bar-q a slab of king salmon. Plated up with some chunked up watermellon, cantalope, and dew mellon. Washed down with iced tea. Not too bad.
But boggy canned tuna is for the cats....I have a dozen or so jars of smoked canned albacore left over that must be used soon as the Albacore will be in soon and I will need to get a few more. Except for the onions which I can't eat eat unless cooked or chopped up very very fine the tuna looks darned appatizing.

Now Winky, you said it was too hot to fire up the grill or cook in the house and here you go firing up the Webber for some ratty old salmon <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />. I done tol' you I know about canned fish and some of us ain't blessed to live near the deep blue. BTW you can even eat canned sardines if you will drain them and soak them in vinegar for a while in the icebox. Catfish and white perch ain't bad mind you but not as good (to me) as prime salt water fish.

If you don't want to lie again about not wanting to fire up the grill <img src="/ubbthreads/images/graemlins/smile.gif" alt="" /> why not make your self some Sashimi or Ceviche. Man I love that stuff.

Then, too, you can always make yourself a steak Tartare can't you?

Bogmeister, seems I lost my last post to some sort of electron malfunction. Any way the temp is down out of the 90's and I am eating the last of the leftover salmon mixed up much as you suggested, I chunked up the fish mixed it with a mayo and horse radish sause added chopped home made dill pickel and some finely chopped jalpeno. Darn that is good stuff.
spread it on fresh sourdough toast and washed it down with sugar free lemon ice tea.
I have been kinda busy these past couple days playing with my wifes new toy.....3 series BMW coupe...neat little car got it cheap cause it ran kinda funny. I found the problem soon after it got home....thermostat..it was hanging up. part of the engine control computor sences the coolant temp.
It was a very good buy on a low milage BMW. Gotta get it back together so I can make a run down to the Ocean to buy some live Dungeness crab. $5.00 each.

SSE, and others the temp is down and it is raining...this rain storm can be counted on every year here in Wa. State. I always rains for a day or two in the first or second week of August. the mud just falls from the sky. Diane washed her Black car today and now it is covered in muddy rain drops..she also washed the white car it too is covered in mud. Lots of dust in the atmosphere.

To night it was buffalo burger cooked on the George Forman grill. I found a great mayo. Wasabi mayo wonderfull stuff. The Eastern Washington sweet corn is avaliable too. Some times i cann just eat a couple ears for dinner and a big tall ice water. i guess I will cut back to one ear time to take care of the waste line. but I do love to cook so I will be cooking for the dog and the neighbors for a while.

If we get a real good down poor I know a place that the Chantrells will be poking their little heads out of the moss by this weekend.

wink - Yeah, in that vicinity weather is an "issue", but what a spectacular place. Last time I was there went down to Gig Harbor to sit in a restaraunt and look at the mountain, but the mountain was a no-show, so I just bought a post card.

Something I need is a place to use the grill when its pouring. Nothing like cooking outside in spite of the rain, sipping, nibbling...you get the idea.

As far as the waist line, I'm working on that, too, because none of the camo stuff I got last year fits. <img src="/ubbthreads/images/graemlins/shocked.gif" alt="" /> Got a few months yet.
