Looking to possibly buy one for smoking. An offset is what I originally wanted to find as I grew up using offsets but with kids growing up and endless commitments with them it’s hard to just stay at the house and babysit an offset Looking at an Old Country insulated gravity feed smoker https://www.academy.com/p/old-country-bbq-pits-insulated-gravity-fed-charcoal-smokerAnd a less expensive, more cheaply built Masterbuilt 900 from Costco. Lump charcoal with post oak, hickory, cherry, apple wood or mesquite splits should be the closest I can get to an offset I believe

They produce a good product, but you have to keep them well cleaned out. I have seen three gravity feeds (a Viking and two Stump's) burn up in pit fires to the point where they are no longer usable.
Know fat, know flavor. No fat, no flavor.
I tried going vegan, but then realized it was a big missed steak.
