Mateos here is TX is pretty good. If you want to try your own… tomatoes, onions, jalapeños, ceranos and some garlic to taste in a blender. Put a little fresh squeezed lime juice in at the end and you’re set
I will make some from the garden here, soon. No recipe, I just chop up everything. This year I am going to add some chopped purslane. I can eat a ton of fresh garden salsa. I like using oil and vinegar salad dressing in it!

5 cans of diced tomatoes, one can of Ro-Tel medium diced tomatoes & chilies, one packet of Mrs. Wages medium or hot salsa mix and 3/4 cup of white vinegar. Bring all to a boil, simmer 10 minutes and chill. Good stuff.
I like homemade and preferably after sitting in the fridge for a day. Standard stuff…… fine chop or chunked, I don’t mind either way. Sometimes I roast the peppers and tomatillos
Ingredients: 1 28 oz. can crushed tomatoes, with juice
1 28 oz. can diced tomatoes, with juice 1/2 large yellow onion, diced
3 bunches green onions, diced
1-4 jalepeno peppers, boiled for approximately five minutes and minced. I like to add the seeds, but you don't necessarily have to. (Add the peppers last and test frequently, or you might get the stuff too hot.)
2-4 tablespoons minced garlic (to taste)
1/4 to 3/4 teaspoon cumin (to taste)
salt and pepper (to taste)
1 bunch cilantro, finely chopped
2-3 teaspoons lemon juice
Directions: Take the above ingredients and blend together. If it is too thick, add a little water. It is VERY simple! You can, of course, eat it once blended; but it is even better after refrigerated for 1-3 hours.
Number Of Servings: This lasts our family of 6 for 4-5 days; but we don't have Anna eating the stuff yet.
12 roma tomatoes cut in half, one onion quartered, 4-5 jalapeños cut in 1/2 and a bisected head of garlic wrapped in foil.
Put that on your smoker for 1-2 hours, 200-225 degrees. Squeeze out garlic into blender and put rest in with a bunch of cilantro, juice from a lime and a healthy dash if salt. Blend to consistency you like.
Until fresh tomatoes come on I use canned fire roasted from Walmart
Bottled tame Jalapeno...cilantro....salt/pepper......minced garlic.....
Lemon/lime juice.......yellow bell peppers.......red onions
That canned stuff from Walmart is surprisingly good and cheap. I browned a little hamburger meat and mixed the Walmart Salsa in and dipped it up with corn chips until it was gone.
