I found a piece of paiche in the back of the freezer the other day.

Seared it quick in some butter and good evoo.

Seasoned with a little Chicago Steak.

My own clams and linguini in white sauce.
Plenty of onions and garlic, simmer those clams in white wine. Let 'em die happy!

I'm not really picky . Not much I won't eat really but if I had to pick probably a good Ribeye and baked potato or fried trout and fried potatoes and ramps in spring. Good fresh tuna steak is never turned down either.

I've never seen it in any store I've been in.

Some old European woman (Romania, Hungary?) I sell wood to each fall, tips me a tinfoil pouch with some kind of cabbage rolls. They seem like they are some heavily spiced ground or chopped bulk pork sausage, with onions and maybe garlic, maybe some strong paprika, a smear of some kind of garlic cream cheese stuff all wrapped in a cabbage leaf roll and fastened with a toothpick and baked. I'd tell you more but there is a significant language barrier. Hands me the cash and the cabbage rolls and says, "Iss fur chopping tree man vork hart, yes".


Well this is a fine pickle we're in, should'a listened to Joe McCarthy and George Orwell I guess.

The fish wholesaler for pretty much all of Montana is in Billings. The largest town.

It's only like 250 miles away.

We gather up everyone's EBT cards and head down there every two or three years.


It's kinda cool what they have.

Thinly-sliced, elk heart ... fried (in butter, obviously) and caramelized Walla Walla onions, fried in the same iron skillet.

And my own spuds, wrapped in aluminum soil and buried in campfire coals ... cooked to a smithin'.

Top it off with raisin pie ... recipe in the Ravali County Lavendar Club's cookbook, circa 1940. And homemade peach ice cream. And sugar heavy on top of that mess.

Great eattin's.

Chicken fried venison, fried potatoes w jalapenos and onions in 'em smothered in cream gravy.
Fried chicken
A 1/3 pound hamburger cooked medium rare, onions, tomatoes, fresh sliced jalapenos, bacon, cheese, pickles and mustard
