Despite freezing rain all night and morning my daughter and SIL made it up to the house and along with my one son and a co-worker of mine we got it done. This pig died right, bled out good, nobody got hurt, and everything went like clock work. A first time experience for my daughter's husband and he fell right in like he'd done it before. I knew she picked a good one with him. They've been hitched since this past November.

Had cast iron pan biscuits, black peppered sausage gravy, breakfast sausage, and hickory bacon slow cooking on the smoker while we worked. Got warmed up and dried out and ate a good hot breakfast before we spilt it and hung it in the shop. Was a GOOD Saturday morning.

If my buddy gets his scalding tank set up this year this might be the last one I ever skin out.
