I wear a 9D, but have narrow heals and low volume feet. What are like folks using that works for hiking/hunting boots? I know it’s not easy and limits what’s available. I’d like boots that are waterproof and somewhat flexible for upland hunting.

Your feet are similar to mine except I'm a 9.5. I have a large assortment of insoles that I use to get the volume and fit right. I normally play with insole and sock combinations until I get one that feels perfect. My current favorites are Crispi and Salomon, but in the past few years have gone to a wide width in Salomon because they do tend to run pretty narrow. Crispi Guide or Wild Rock are excellent hunting boots and their Summit is a good gen purpose hiking boot. I wear Salomon X Ultra mid for hiking in the Smokies but picked up a pair of Altra Trimp a month or so ago to try.
The X-Ultra get a Superfeet Guide (not made any longer) paired with a Smartool PhD or Darn Tough mid weight. The Trimp is the standard OEM insole and Darn Tough lightweight socks. The Wild Rock/Guide get a SofSol insole and Darn Tough OTC socks. The Summit have a SofSol and I use Smartwool PhD or Darn Tough midweight.
You can make about any higher volumer boot work for low volume feet within reason and a bit of insole-sock interactions.

La sportiva is known for a low volume fit. They have lots of good models. I use the glacier for wildland firefighting and it's great.

ASOLO POWER MATIC 200 EVO GV-great boot, I have feet just like you and they fit great! I thought about them but figured they are too stiff for flat ground upland type hunting? What’s your thoughts?

ASOLO POWER MATIC 200 EVO GV not really overly stiff for flat ground. I used to wear them all of the time.
