My favorite way of cleaning the little dickens is to clean 'em up really good and then give 'em to a friend that likes 'em. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />

Blammer here is a way that was taught me by a Mexican cook using white wings and it works on mourning doves too. If you just fry the little buggers they are tough and kind of liverish tasting to me here is the method I was taught. Using breasts only.
Put them in a tall narrow glass like a big iced tea glass. Pack them in there pretty good. Pour enough tequila in there to cover them and throw in a halved, seeded jalapeno pepper. Let them sit in the icebox for about three or four hours. Take them out and pat them dry, sprinkle a little season salt on them and wrap a half slice of bacon around each one held on with toothpicks. Throw them on the grill bone side down for about four minutes and then flip them over for about another four. Eat em up. They are good this way.

Wrap the breast with half of a pickled jalapeno pepper and a strip of bacon. Hold it together with a toothpick and grill it. I can eat these until I go blind.
Or:
Bone out the breasts leaving two fillets, marinate in soy sauce with a pinch or two of ginger. Stir-fry in a hot wok with peanut oil. Just before done toss in thinly sliced bell peppers and tomatoes with a few water chestnuts, carrots and green peas added for decoration. When the veggies get crispy-limp remove everything but the liquid with a slotted spoon, add a little corn starch to thicken the "gravy" and serve over rice.

Wrap them little buggers in a good pepper bacon and throw them on the grille. when done peal the bacon off and through the dove to the dogs. Just kidding the little buggers are great off the grille I just could not resist my bent humor jumps in every once in awhile. <img src="/ubbthreads/images/graemlins/grin.gif" alt="" />
