Don't have a clue how to calibrate it, but there's one way to compare the relativity of cherished delicacies. Some folks in Louisiana sent me some Steen's cane syrup, and I enjoyed some this morning on buttered waffles. (Had to spit 'em out, of course, but enjoyed that wonderful cane flavor as long as I could, first.) In doing so, I discovered a way to define the ultimate in delicacy, a standard for comparing other delicacies -- found myself resenting the unavoidable loss of all those drops and smears of untasted syrup that I had to watch go into the trash barrel with the empty syrup container and into the wash water with my not-quite-hound-dog-clean dinner plate.
"Good enough" isn't.
Always take your responsibilities seriously but never yourself.

You hit is right on the head. There are only a few things that would make me "lick" the plate, Steens is one, my grandmother's rabbit dish and the fat from crawfish boiled just right. BTY the offer of a shipment of Steens from this displaced cajun, even though some kind soul from my neck of the woods has sent some, still stands.

I think the true measure is when the kids/wife keep eating "samples" as fast as I can cook them. In our house the prime examples are breaded, boneless pickeral fillets, and even more so... pickeral cheeks... "Delicacy" to me also implies something not readily available... (like pickeral cheeks)... but I think any wild game (fish included) could be considered to fit that bill.
