Sherry Beef Soup

6 Tbsp. Extra Virgin Olive Oil 3 Cups Dry Sherry
1 Lbs. Cubed Beef Stew Meat 1 tsp. Celery Salt
1 Package pre-sliced Mushrooms 1 tsp. Onion Salt
1 Cup Chopped Onion 1 Tbsp. Parsley Leaves
4 Stalks Chopped Celery 1 Tbsp. Rosemary Leaves
4 Chopped Carrots � Tbsp. Thyme Leaves
2 (14 oz.) Can Seasoned Beef Broth 2 Tbsp. Basil Leaves
1 (15.25 oz.) Can White Corn 2 (14.5 oz.) Cans Diced Tomatoes

1. Heat 3 Tbsp. EVO in a large soup pot over medium to high heat.

2. Dice and saut� in EVO for ten (10) minutes:

1 Package pre-sliced fresh Mushrooms
4 Stalks Celery
4 Carrots

3. Add to cooked fresh vegetables:

2 (14 oz.) cans of beef broth
2 cups of dry sherry
1 (15.25 oz.) can white corn

4. Heat 3 Tbsp. EVO in a medium pot over high heat.

Brown and saut� in hot EVO 1 lbs. of cubed beef stew meat
When the stew meat is browned, add 1 Cup Dry Sherry and simmer over low heat for fifteen (15) minutes and add to vegetables.

5. In a small bowel mix:

3 Tbsp. Flour
� Cup cold water

6. Stir flour mixture into vegetables and simmer until thickened, stirring often.

7. Season with:

2 Tbsp. Basil flakes 1 Tbsp. Parsley flakes
1 tsp. Celery salt 1 Tbsp. Rosemary flakes
1 tsp. Onion salt � Tbsp. Thyme flakes

Continue to cook over low heat for at least fifteen (15) minutes.

This recipe is better tasting if you cook it the day or evening prior to serving it and allow it to simmer on low heat for a couple of hours before cooling and refrigerating. We reheat it in a slow cooker/crock pot. These ingredients make 6 large or 8 medium bowls of soup. Although it doesn�t seem logical, a good quality dry sherry, like Harvey�s, actually tastes better than a less expensive generic dry sherry. We�ve tried it both ways and prefer the richer favor of Harvey�s. If you like the taste of Harvey�s, it can be substituted for red wine in most recipes with good results.

Optional:

1 (4 oz.) Can Chopped Jalapeno Peppers for hotter/spicier soup
2 Tbsp. Cholula Sauce for hotter/spicier soup
1 (14.5 oz.) Can Diced Tomatoes with Roasted Garlic & Onions in lieu of plain
1 (14.5 oz.) Can Diced Tomatoes with Green Chilies in lieu of plain
Any additional/different vegetables that you like; peas, green beans, butter beans, turnips, etc.

Man, that is a great sounding recipe, and I'm going to try it.

However, I might use a bowl instead of a small bowel.. or at least I would rinse the small bowel very well. smile
