Was given a small roast (from a small black bear <img src="/ubbthreads/images/graemlins/tongue.gif" alt="" />) & some ground bear. Never eaten bear before so don't know if there are any "must do's". Marinade? How should I cook the roast? I know it must be properly cooked like pork, but thats about all I know. How about some ideas please.
Thanks, badger

Here are a couple recipes you might try. There's one for a bear roast and another for meatballs made with ground bear meat (along with recipes for other cuts of bear meat). http://www.agfc.com/pdf/bear_rec.pdfI haven't ever tasted bear meat, but I found these recipes last year when I was thinking about going bear hunting and wondering what one does with the meat.
