I have had it with graham cracker crusts for cheesecake and tarts. I have been using a shortbread crust instead.

Shortbread Crust for Cheesecake


1 1/3 cup AP flour
1/3 cup Sugar
Pinch Salt
1 egg
1 stick unsalted butter

Have egg and butter at room temperature

Sift together the flour, sugar and salt.

Add the egg, and the soft butter. Using a mixer or pastry cutter, mix well, until the crust is soft, crumbly and moist.

Spread in the bottom of the cheesecake springform pan, or tart pan. Use your fingers, and don't roll the dough out.

Dock well, and bake for 10 to 12 min at 400. Edges will start to brown.

Cool on wire rack, and proceed with the cheesecake or tart recipe.

Nope, probably because I rarely eat dessert and when I do with a graham cracker crust it's Key Lime Pie. I never get tired of that. smile

I stand corrected. My Key Lime pie has always been made with a correct crust, and will continue to be smile

'Nilla wafer crust for me. Actually, I could probably do away with all crusts...just eat the filling.

ok if you truly want a change of pace with crusts use OREO cookies and fill it with: chocolate pudding and top it with whip cream,or cheesecake and cover it with cherries, or sliced bananas and vanilla pudding or just butterscotch pudding with slivers of a dark chocolate Hersey bar
and a tall glass of ice cold milk
