My first try at Salami.

30#s, using a mix from 'the sausage maker'

I am letting it dry in the fridge till mourning, then two pans of chips...........then finish in the oven.

It just fills my 5 trays in the 'Big Chief'

Then 6#s of jerky.........on Sunday.

Venison? Let us know how that turns out. Several years ago dad and I gave a go at summer sausage using one of the kits that Cabela's had, smoked it on one of the R2D2 Brinkman smokers. The stuff was tolerable, and thats about all the compliments I can give it.

If you like what you make, let me know what particular 'recipe' you got and the specs on how you cooked it. Girlfriend built me a smoker for Christmas, looks about like an outhouse, will give it a go as soon as the weather turns decent for an extended period.

Yes it is venison, and I will report on the outcome.

I have used his Venison Hot Stix recipe for 3yrs. excellent!

It was 11:30 last night when I finished 'showering' the last bunch of sticks...........but at 10:30 ish the small one got cooled and tasted.

Need I say more than "my wife likes it"
