The wife and I like fried shrimp. Just this evening we fried up a couple pounds. We usually let them drain, then coat them with Cracker Crumbs and fry.
There must be other ways to batter shrimp, and I was hoping you fine folks would offer some suggestions.
So, how do you batter your shrimp?

Last time I recommended a batter, I was accused of selfishly promoting a product on the Campfire. It is with great reluctance, and tongue in cheek, that I sing the praise of Krisppe fish batter They are a Rhode Island company and everybody here uses their product. It is superior to Drum Rock or Fish Chick batter and as a Rhode Islander, I am very proud of them as a local company. They make an excellent product. I use a simple mixture of AP flour, fine ground cornmeal, salt, pepper and hot Hungarian Paprika. The proportion is about 3 parts flour to one part corn meal, and season to taste.

I prefer a tempura type batter on shrimp. It's thinner, crispier. I normally add either a good shot of Cajun or Creole type spice or Chinese 5 spice mixture to it. Golden Dipt by Club House is available to us most stores but you can also make your own using rice flour. Lemon zest added in is also quite nice.

my mom's recipe from 40some years ago:
for 1# shrimp, mix 2 eggs, juice of 1 lemon, 2 tbs mayo, 1 tsp baking powder
soak shrimp 20 min then shake 'em in bisquit mix and fry

Stop and Shop and Shaws: comes in foil bags. Get the fritter mix too! Alas Rob, stopped at two stop and shops and they didn't have any, just a McCormicks mixture that I can get here, so I'll have to search next trip.
