3\4 cup paprika(not old stuff from the cuppboard)
1\4 cup salt
1\4 cup ground black pepper(fresh if possible)
2 tablespoons onion powder
2 tablespoons garlic powder
1 tablespoon cayene pepper
1\3 cup brown sugar
1 tablespoon minced dried orange zest
12 juniper berries,crushed in a mortar & pestal
1\2 teaspoon alspice
This is great for cooking a roast in a oven bag.
Make sure that you let it set, and soak in for a couple of hours.
If you can't get juniper berries,sub your favorite jelly(grape works fine).
Rub the meat, as long as your concience will allow(at least 2 miutes).
