I don't think it should be a problem, but I just want to double check....
Hand ream a 7mm rem mag to 7mm stw?
The body taper is the same if not incredibly slightly less for the 7mm stw, so I would be basically reaming the shoulder down until I get to the belt, right?

Perfectly fine for your unit, but not on mine. I'd put it in the same league as those that crown barrels with hand tools. Yes, we hear from those that get by with it, but the ones that screw up and need a smith for a fix seldom chime in.

Would a pull thru reamer be acceptable for a rechamber job like this?

IMVHO, the proper (and best) way to do this job is to send it to a 'smith who knows what he's doing.. The cost won't be a lot more than the price of a reamer and you'll be getting a good job instead of a 'maybe-this-will-work' result.. He'll have the tools, the knowledge, the gauges etc., to do it right the first time..
Just my .02...

You have a 50, 50 , chance of this procedure turning out a good straight chamber and not wallowing out in places. I would take Redneck advice and take it to a smith who has a lathe and can set the barrel up to cut a good chamber. I assume you are planning on doing this from a regular vise and hoping your reamer will follow the line of the bore, good luck. The reamer and head-space gauges will cost you more than most smiths will charge you. One other thing if you over cut the chamber then you will have to pull the barrel from the action and have a smith set the barrel back a thread or two , re-cut the tenon and re head-space. If you decide to do this yourself go real slow when you get close to headspace.
A Doe walks out of the woods today and says, that is the last time I'm going to do that for Two Bucks.
