I am planning a backpack trip in for the deer opener and trying to save weight. Local options are limited, but Sportsman's did just get 2 of the Vortex Backcountry tripod's in. Seemed fairly cheap(price and quality) but 2.1 lbs is light. Obviously it would work better not fully extended, but any real life experiences out there?

I have that tripod and like it. I have a nikon 50ed compact scope I use with it and it has worked great so far. I agree that fully extended it looks kinda weak/flimsy but I haven't used it that way yet. I haven't used it in gale force winds either but between the hook for a weight(water bottle) and holding the head if I have to, it's pretty solid. I've never tried the high-end tripods but I figure any lightweight tripod is going to have it's limitations.
