Hey guys, just getting situated in our new home and the kitchen supplies are far from where they should be in terms of quantity/quality.

Here's hopin' that the experts at the 24HCF can set me straight on ordering the ESSENTIAL spices found in an everyday home kitchen.

Sooo many times in the recent past recipes I have picked up have not made it to the table because of a dearth of the essentials on our pantry shelves.

Care to recommend 10/12 to keep me from running back and forth to the store.


Probably go here to shop for 16oz or larger.

*salt,* pepper corns, * garlic glandules , *onion powder, *mustard powder, *cumin, cinnamon ,cayenne, * crushed red pepper,* coriander,* marjoram ,* oregano, *celery seed,* chille powder ,* sage ,* paprika ,*thyme�. - branch out with these extras; ginger -* rosemary- * white pepper - -* saffron (that last one will last for ever wink as its big $$) the ones with * are my go 2�s / if I run out of these I react the same way as if I were out of tater�s and onions !!!911!!! ESSENTIAL: well not all would i bring to the table--but the one's above with make some taste'e dishes so all the would be needed at the table is salt pepper and some hot sauce....02cents wink

Cardamom, if you ever want to taste the most delicious of baked goods you need Cardamom. It also makes for the most delicious Cardamom Honey Chicken Recipe that you really need to try.

Cardamom Honey Chicken Recipe

1 Preheat oven to 400�F. Warm the honey, stir in the sherry, cardamom and peppercorns. Place marinade and chicken in a large bowl, coat chicken with marinade. Cover with plastic wrap and let sit at room temperature for 30 minutes.

2 Heat olive oil in a large frying pan at medium high heat. Sear the chicken, skin side down, until golden.

3 Place lemon slices in a roasting pan. Lay the chicken pieces on top. Brush with the marinade. Season generously with salt and pepper. Place in the oven and bake until done, approximately 15 minutes for breasts, 20 minutes for thighs, wings, and drumsticks. Remove from oven and let rest for 10 minutes before serving. Pour out drippings from the pan into a gravy boat for gravy.

I serve it with garlic mashed potatoes.


Cardamom-currant snickerdoodles

1 cup unsalted butter, melted and cooled

� cup brown sugar

1 cup white sugar

3 cups all-purpose flour

1 tsp. ground cardamom (freshly ground is best � if you have freshly ground cardamom you may be able to use less, � � � tsp., because it�s more potent)

1 tsp. baking soda

2 tsp. cream of tartar

� tsp. salt

3 eggs

1 tsp. vanilla extract

� cup dried currants

For the cookie coating:

3 Tbs. granulated sugar

1 tsp. ground cardamom

Preheat your oven to 425F.

In a medium mixing bowl, stir together the sugars, flour, 1 tsp. cardamom, baking soda, cream of tartar, and salt. Whisk the eggs into the melted butter, then stir in the vanilla. Stir the wet ingredients and the currants into the flour mixture, stirring just long enough for everything to come together into a dough. Chill the dough in the refrigerator for 10 minutes. In a small bowl, stir together the 3 Tbs. sugar and 1 tsp. cardamom for the coating. Take out the chilled dough, roll it into 1 � inch balls, roll each ball in the sugar coating, then place onto ungreased cookie sheets with about 2 inches of space in between them. Bake for 8 minutes, until they look golden and cracked on top but still a bit doughy in the middle. Transfer immediately from the baking sheets to a cooling rack and allow to cool.

Miss Lynn, I've no experience w/cardamom but here's a recipe given to me by a friend and professional chef.

I haven't tried it just yet sooooo "you're it" laugh

Beef brisket rub:

Equal parts cardamom, cumin and coriander added to 3X that amount of brown sugar.

The commissary at Fort Rucker to open so I don't have to pay a king's ransom for brisket. I actually looked at brisket the other day, and I was wondering if I bought it, what kind of rub I would use.

2. thyme
3. peppercorns
4. curry powder
5. ground ginger
6. cinnamon
7. ground cumin
8. chili powder
9. rosemary
10. cumin
11. dry mustard
12. oregano

I'll stop at 12 'cuz that's all you asked for, but I could go through my whole spice drawer and cabinet and tell you what I have. Almost all of it came from either Costco or the bulk department at the local grocery store.

I have lots -- but most of the time I use salt, pepper, paprika, oregano, basil, and mustard. For quick and dirty I have a container of Tony Cachere's.

There's lots more, but if that was all I had I'd do just fine.
