1. Rub favorite cut of meat (this is filet) with favorite rub after a slight coat of olive oil.

2. Put cast iron skillet in oven and heat to 500 degrees.

3. When oven reaches 500 degrees take out and put on stove burner on high. Put steak in skillet and don�t move for 1 min. Flip steak and cook other side for another min.

4. Place steak back into oven until cooked to desired doneness. For me that is Rare�very rare. Just a nanosecond past no longer cold. Meaning 1.5 min. on each side in the oven for this thickness steak. For you med. Rare folks that will be around 2.5-3 min. per side in the oven. The steaks are pan seared on the stove and cooked to liking in the oven.

5. Take out of oven and place on plate and cover with tented aluminum foil for 10 min.

6. Eat



For this I topped with Emeril�s Maitre d�hotel butter and plated with roasted red pepper sauce.
