Last eve we had leftover vegetable soup. What again! I was thinking about something to go with it. Here's what I came up with.

We split two English muffins, making 4 slices. They went in the pop-up toaster until about 1/2 way toasted.

I spread creamed cheese on each slice, topped with a thin slice of hard salami, then a slice of tomato with chopped fresh basil, and covered with grated mozzarella cheese.

Placed on a cookie sheet and cooked under the broiler until the cheese melted. They went well with the soup.
