I have had good luck with Jason's knives in both D2 and S30V. Edge holding has been as good as any I have tried but like any D2 or S30V if you let them get dull it will take some work to bring back the edge.

Also as already mentioned a Mike E Miller knife is a very good value and if you prefer a hollow grind he is the one I would contact.

Lots and lots of good makers these days. Most of the knifes today hands down blow most everything away that was made 10 years ago. Grind and heat-treat is much more important than the steel. I wouldnt have s30v on a knife its sorry stuff to sharpen for anybody other than somebody that likes to do it! I laid my hands on only one of the young wistons knifes and it was ground very nice and did not have any sharp corners on the handle. I suspect he hunts or has been around people that do. Lots of guys make knifes but not many make good tools!

One thing I think worth mentioning about flat grinds especially if you opt for S30V, is that they are harder to sharpen once you have killed the initial edge cause they get thicker much faster than the wheel grinds used by Menefee and Miller.

this is a concern, the hard to sharpen part. Maybe its a hollow grind I am looking for??

Now if we can only convince Winston Sr. to start doing hollow grinds again. Curious to see what he does?

Gotta say, I don't believe S30V is all that difficult to sharpen. I have more than a few and no real issue. Also, I don't buy the idea that a hollow grind cuts better. I have way to many of flat ground knives that are and stay more than razor sharp.
