I use a smoker that I made out of a beer keg a couple of years ago.

It is based on the same design as the Ugly Drum Smokers, but shouldn't ever rust because it is all stainless.

Someday I will step up to one of these:

Question here.
I have had good luck( and taste ) doing turkeys, pork, sausages, etc. The lighter meats, but not so much on the darker meats like deer, elk, antelope. I don't get the good smokey flavor. A little but not a lot.

Am I doing something wrong,or is that just the nature of smoking?

Ya know Keith, that small is probably my most used egg right now. For just my wife and I it is great for steaks, burgers, chicken, etc. It doesn't use much lump and with the cast iron grate and woo ring it is great for T-Rexing steaks.

It's very easy to move so I pull it right up to the patio door on cold nights. Although you can smoke on it, I like the real estate the larges give me for that. I got a really good deal on it as my dealer had it in his show room for a year and wanted to make some room.

We had company before Christmas and I had all three going. Twice baked potato's indirect on large #1, bacon wrapped filets on the small and the wok in large #2 for stir fried veggies. It smelled like Eggtoberfest on my deck! grin

I use my small more than any others. I also use my smokey joe a lot. Don't like burgers on the BGE but everything else rocks on a small.

I would not go lower.

Medium is perfect for tailgates!

Why are something as simple as burgers so hit and miss on eggs? I've had some great ones and had some miserable failures. Of course the great ones are always when it's just the two of us and the failures seem to happen when I have company.

In all fairness the perfect burger has been my nemesis clear back to my gasser days. Guess I should be happy that I don't screw up the expensive cuts like whole tenderloins and rib roasts!!

Don't waste your time, go to Cabela's or order a Smoker Grill, leave the rest in the dust, turn on the gas, put in the chips and start smoking...

Depends on how much you want to spend. I've done many a fine bird on a Brinkman bullet water smoker. They're practically disposable at $75.

Weber? They're smoker is bigger, and offers more heat control, but it's also aroun $300.

Smoke on a Weber Kettle, you can. Just got to pay attention.

BGE? Ok, if you got a lot of cash to spend and intend on using it a lot.

Should work on your BGE. Low and slow to 150ish internal temp. Remove burgers and set aside. Crank egg up to high heat then replace burgers for the dash to the finish line. Yuummmmmmmmmmm.

get the bigger meat colder...i start most everything at room temp...state 40deg meat and it will take in lots of smoke...a hot and cold exchange thing.

I would say that a good smoker is like a good handgun; each brand has an upside and depending on what your specific needs is there are going to be down sides. Figure out if you want to take the time and patience for a charcoal or if you want to shoot and forget like the electric or propane. Once you find one you want�. conduct lots of practice and once you feel confident, well then that is the smoker for you. My dad once had the same conversation with me after I asked him what should be my first handgun. LOL

Pretty good all around tasty general purpose rub with something tropical in it.
