I guess I am one of the few that sucks at sharpening. I own at least 5 different systems and suck at each one. It drives me nuts that I can't master this. And yes I have practiced.

I can't do it free hand, so I used a Lansky for a few years, and then switched to a Edge Pro recently. I'm pretty happy with it.

You do get a sense of accomplishment, once you have made one hair-popping sharp smile

I know how to sharpen a knife.

First you stick it in the Lansky clamp. grin Then use the coarse stone to set the bevel you want, the medium stone and then the fine stone.
If it gets dull the medium stone gets it sharp and leaves a nice microscopic sawtooth edge which seems to cut most stuff a little better than the really fine edge.

Without the Lansky I'm better off with an Exacto knife or box knife with replaceable blades.

I can hone a knife to a pretty good edge, but frequent use of a steel keeps edges keen without having to remove metal very often.

I don't see folks using a steel much these days, but it sure makes a difference for me.

I admit I suck at it but manage to get it done when I have to. I am fortunate to have 2 close friends that are knife makers. Not only do I get free sharpening but have some very nice knives.
I don't carry a dull knife.

I finally broke down and had a really good custom knife made. Bruce Bump, the knifemaker, used SV30 steel and sharpens it for me each year for free as part of the purchase agreement. I am told SV30 is tough for a person without specialized tools to get an edge on. He then does any others for $1.00 each on a set of BIG belt sanders. Gets them all literally razor blade sharp in no time. Worth a buck a piece for me to have him do it, with ease.

You guys want to see my elephant ivory handled bruce bump knife? DOn't want to hijack the thread. Anyone here been succesful in sharpening SV30 with home tools?

That's a good point. I have a neat Gerber steel that's probably 35 or 40 years old and a couple swipes on it will straighten out an edge really nicely. Had a good chef's kitchen knife steel and used it a lot but the ex kept it, probably should go get another one.

Got some Chicago Cutlery kitchen knives and to tell the truth I just run them across the little ceramic sharpener built into the back of my electric can opener, that keeps them plenty sharp.

I know how to sharpen a knife and mine always are. But, I look at knives as tools. I don't collect them and I don't worry about keeping them pristine. I admit I will abuse them on occcasion and if I break one, I'll replace it.
For pocket knives I buy Uncle Henrys. Usualy a Stockman. For the tool box, any decent folder. For the kitchen, I go to commercial restraunt supply companies.

I sharpen my own knives, axes, hoes, shovels, machetes, mower blades, and chainsaw chains. A sharp knife axe and chainsaw are a lot easier on the user.

I cheat. I was a free hand grinder for over thirty years as a head builder. Occaationally I would see blood on the bench and have to start looking for which part touched an edge. Never felt a cut.

When Sue nd I frist got married I made her a knife from a file. One day I was looking for it to cut something and asked her where it was. She told me I threw it away because it wouldn't get dull. That's twice in my life I have been crushed emotionally by something someone did.

For many years into my 20s I was all a-bewilder and frustrated with the sharpening goblin. I could put something resembling a sharpened edge on a kitchen knife with a steel, but not properly sharpen a blade. It wasn't until I read up on it a bit, and decided I'd sit down with a half dozen knives and was going to teach myself, taking a weekend if I had to. I was going to be able to sharpen my knives. I'd say after 10 hours I started getting some results.
