Typically I cut a bunch of stakes and then if I don't use them up before the next season I take them out and slide them and make some damn nice stick jerky

I use liquid smoke, soy sauce, cyan pepper, and some salt and pepper to marinade it then I run it through the dehydrator.

Anyone got a better mix

I haven't made much jerky, but shouldn't there be some onion or garlic in there?

I do the old salt, pepper, garlic powder, then put in smoker using hickory for smoke. If you enjoy the flavor of venison, this is the traditional way to make jerkey.

Used to cut the meat into strips like most everyone else. I now put the meat through one 'course' grinding and then put it into a large bowl. I then introduce my ingredients and mix it by hand until it is completly mixed. Don't get as many hot spots with this method. Then lay it on a large piece of wax paper and then put another piece of wax paper on top and then roll it out with a rolling pin. When it is all rolled out to the thickness I like I take a mayo jar using the mouth cut out circls until can't get anymore. Pick up leftover eat and roll it out again and repeat till all meat is gone. I put it into my smoker with Hickory chips and smoke it for about 6 hrs. When it is done it fits nicely into the mayo jar for storage. The spices are mixed evenly and it still chews like jerky. Try it ..you'll like it.
