I'm always working on maintaining a healthy weight and staying in relatively decent shape. Lately I've been eating the following as a low-calorie, stuff my stomach lunch.
1 yellow summer squash
2 zucchini (8-9") (cut squash into 3/4"-1" thick medallions)
1/2 red onion, cut coarse
1/2 bulb of garlic cloves, peeled, left whole
1 tbsp. EVOO
Pre-heat oven to 450 while prepping and toss everything into a 10" cast iron skillet. Pop in the oven, scrape/toss/turn everything about 10-15 minutes in. It's finished when you smell roasted garlic in your kitchen and the squash is cooked, but still relatively firm and not falling apart. Sprinkle with some coarse salt and black pepper and enjoy! I often accompany it with a walleye fillet or a few bluegill fillets that are seasoned and quickly broiled. Or I'll broil a small venison or beef steak. With 6 oz. of fish, this totals up to 300 calories , tons of flavor, a full belly, and lots of nutrition. Enjoy!
