I am loving what the Big Green Egg is doing for my food. Dishes I've been eating forever taste so much better on the BGE. Instead of using an oven I'm using the BGE. It imparts a little bit of smokiness that makes food better! Tonight's dinner, stuffed peppers.

Recipe for 4 medium sized green peppers:
1 pound of meat of your choice 1/2 cup of finely chopped onion 1 can of tomato soup 1 cup of cooked rice 2 tsp of Worcestershire sauce (or more as desired) 1/2 tsp of salt generous dash of pepper sliced cheese shredded cheese(if you like cheesy, if not the sliced cheese will be sufficient)
Remove tops and seeds from peppers. Cook in boiling salt water for 5 minutes, then drain.
Brown the meat and onion, then drain. Add 1 cup of tomato soup and the rice, pepper, salt, and Worcestershire sauce. If you like it cheesy you can also add some shredded cheese at this point.
Place the mix in the peppers, leave a little bit of room at the top of the pepper.
Bake the filled peppers for 20-25 minutes at 375�. Spoon the remainder of the tomato soup on top of the peppers and place sliced cheese gently on top of the soup. Continue baking until the cheese is melted.
Of course if you like heat you may want to add some jalapeno in as well!

Anybody gave them a try yet? Any tweaks? I think I'm going to fix them again in the next few days, every time I look at this thread it makes me hungry.

Try red bell peppers. They're sweeter.
Maybe a good Italian sauce instead of straight tomato soup?
Parmasean-panko bread crumbs?
Jasamine rice. In fact, how about red beans and rice?
