The Gregor Woods and, especially, the Graeme Wright books are good. I would also suggest the seconc edition of Craig Boddington's book, SAFARI RIFLES II.

Terry Wieland's Dangerous Game Rifles isnt bad
the A-Square manual Any Shot You Want has a fair bit on big bore double rifles
old school: John Taylors African Rifles and Cartridges ofcourse is a classic
The Rifle: Its Development for Big Game Hunting by S. R. Truesdell goes over the rifles all the major professional hunters used and is a good read if you like history
A serious student of the "Armchair Safari" always looking for Africa/Asia hunting books
