One of the most relaxing weekends we have had in quite some time and all the folks gathered were (as usual) outstanding!

We did not smoke a brisket.
It was a shoulder clot (a beef front shoulder roast that weighed at least 15lbs). We cooked it all night on low temperature, then I smoked it for a few hours with mesquite and pecan wood.
I think the potato salad and beans were the best thing I fixed, not counting the cocktails that I whipped up.

Jesus that sounds incredible.

Gawda MIGHTY! I am ready to move to Texas. Ya'll did have a heck of a weekend.

Do NOT make the same mistake I did and invite David [Paladin] on your next dove hunt.

1. He will come.

2. After watching him shoot, you just want to sell all your shotguns.

You din't hear me braggin' too much that second afternoon when they had that 40mph tailwind.

We did burn quite a bit of powder, especially on Saturday afternoon when that 40-mph tailwind got under them doves. I was leading 'em by about four Cadillacs on crossing shots. Okie & MrsOkie & me mostly just herded the doves toward Roger with our shots, and he was freakin' deadly on those fast crossers. Pat & Bluedreaux and Pat's boys from East Texas hung out around a water hole & millett field and slaughtered the doves like David slaughtered the Philistines.

Pat did get MrsOkie's goat just a little bit after he limited out on Day One with less than one box of shells...

Steve brought some cee-gars from a shop he knows in NOLA that were so fresh I smoked several. They were so good that when Steve slipped on a slippery rock in the Frio he sacrificed his flybox in order to keep his stogie above water. The man does have his priorities straight, I must say.

And Isaac, I'm sorry to have to tell you this but you know I can't lie to you... Bart's shoulder clot was even better'n his brisket. We ate awfully well.

Also, Bart made a LOT of his trademark Sailor Jerry cocktails and many of us was overserved Thursday and Friday nights. We were all in a pretty mellow mood by the time the Saturday evening dove hunt got started, but after we got back from the hunt, chowed down on that savory tender smoked beef on tortillas with home made pico de gallo, tater salad, and Bart's beans, we REALLy got mellow.

Those of you who missed it this year better get your deposit in to Pat quick because I doubt anyone who was there this year will miss it next time around.

It was a great weekend
