I tried this recipe last night from the Cooks Illistrated guide to Grilling & BBQ. Its outstanding. I used it on pan seared salmon and I put that recipe up in the past. I just added the glaze to the pan the last two minutes and let it reduce even further and then drizzled the pan drippings over the salmon when I served it. I did drain all of the oil from the pan before I added the glaze. Enjoy!
1/4 Cup Maple syrup 2 Tablespoons Soy Sauce 1 teaspoon minced chipotle chile in adobo sacue ( I used primarily adobo sauce ) 2 Tablespoons Lime Juice
Strir together the Maple Syrup, Soy Sauce and chipotle in a small sauce pan. Bring to a simmer over a Medium-High heat and cook until slightly thickened, 3-4 minutes. Remove from heat and whisk in the Lime Juice.
